- Step 1Layer vegetables in pot
In a large pot, layer the sliced onion, chopped carrot, sliced celery, chopped napa cabbage, sliced green bell pepper, and cubed zucchini.

Place the whole chicken on top of the vegetables. Add sliced ginger and the halved head of garlic over the chicken.

Scatter sliced shiitake mushrooms over the chicken. Drizzle soy sauce over everything.

Cover the pot with a lid and cook on medium-low heat until the chicken is fully cooked and the vegetables have released their juices, about 60 minutes.
NoteThe vegetables release enough moisture to cook the chicken without any added water.

Uncover the pot and baste the chicken with the cooking liquid. Continue cooking uncovered for a few minutes to concentrate the flavors.
- Step 6Prepare noodles separately
Cook the noodles separately according to package instructions. Drain and set aside.

Place cooked noodles in bowls. Ladle the chicken, vegetables, and broth over the noodles. Top with sliced scallions, black pepper, black sesame seeds, and a drizzle of sesame oil.
