High Protein Japanese Potato Salad

Method

  1. Step 1Boil the potatoes20 min

    Peel and cube the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

    Boil the eggs for 10-12 minutes until hard-boiled. Peel and chop into bite-sized pieces.

  3. Step 3Cook the chicken

    Season the chicken with salt and pepper. Cook until fully done, then dice into small pieces.

    You can grill, pan-fry, or bake the chicken depending on your preference

  4. Step 4Prepare the vegetables

    Dice the cucumber and finely slice the spring onion.

  5. Step 5Combine and dress

    In a large bowl, combine the cooled potatoes, eggs, chicken, cucumber, and spring onion. Add the Japanese mayonnaise and mix gently until everything is coated.

    Note

    Use a lighter high protein mayonnaise to keep the macros in check

    Season with additional salt and pepper to taste. Refrigerate until ready to serve.
