- Step 1Mix the dough
Add peanut butter, pumpkin puree, pumpkin pie spice, honey, coconut flour, oat flour, and protein powder (if using) to a large bowl and mix until well combined. Depending on the consistency of your peanut butter and the type of flour/protein powder you use, you may need to add a little more flour or protein powder. You want the mixture to reach a dough-like consistency.
NoteMaple syrup works instead of honey if you prefer. Almond flour works instead of oat flour.

Roll the dough into balls (this recipe makes about 20) and place on a parchment-lined plate or tray. Freeze for at least 1 hour.
- Step 3Melt the chocolate
Melt 1 cup chocolate chips with 1 tbsp coconut oil in the microwave in 30-second intervals, stirring between each, until smooth.

Dip each energy bite into the melted chocolate, then place back on the tray. Freeze for another 20–30 minutes, then enjoy!
