Method

    Heat oil in a large pan over medium-high heat. Season turkey pieces with salt and pepper, then brown on all sides until golden, about 6-8 minutes total. Remove and set aside.

    Don't overcrowd the pan; brown in batches if needed for better color.

    In the same pan, add sliced onion and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

    Stir in tomato paste and cook for 1-2 minutes. Pour in chicken stock and bring to a simmer, scraping up any browned bits from the bottom of the pan.

    Note

    Diced tomatoes work well here too if you prefer a chunkier sauce.

    Return the browned turkey pieces to the pan, nestling them into the sauce. Reduce heat to low, cover, and simmer for 25-30 minutes until turkey is cooked through and tender.

    Note

    Check occasionally and add a splash of water if the sauce reduces too much.
