   Boil the potatoes until tender.

   Pass the cooked potatoes through a sieve.

   Nota

   A tammy or drum sieve works best for this.

   Pas 3Mash in the butter

   Beat the butter into the passed potatoes to make the mash.

   Pas 4Salt the cucumbers

   Slice the cucumber, salt it, squeeze out the moisture with some pressure and add lemon juice.

   Replace the moisture with sugar, vinegar, diced shallot and dill.
