   Scoop the avocado flesh into a jug, add the lemon juice and salt, and blend with the immersion blender until smooth.

   Cut the peach, nectarine, tomato and feta into cubes and put them in a bowl.

   Add the olive oil, dried oregano, vinegar, salt and black pepper to the bowl and toss gently.
