- Step 1Sear the beef shanks
Sear your seasoned beef shanks in a hot pot. Set aside.

In the same pot, add the onions, garlic, tomatoes, bell peppers, squash, and carrots. Season with oregano and sauté for 2-3 mins.

Return the beef to the pot, pour in the beef stock, cover and cook for about 2-3 hrs, or until the beef is tender.
NoteCheck tenderness by pulling a piece with a fork — it should fall apart easily.

Remove the beef and chop it into bite-sized pieces.

To make the balls, combine corn flour, cheese, salt/pepper and a little of the broth until the dough is soft and pliable. Roll into balls of desired size.
NoteThe dough should be slightly sticky but hold together — add more broth if too dry, more flour if too wet.
