Method

  1. Step 1Prepare the batter

    Combine flour, plant milk, and sugar in a bowl. Whisk until smooth and no lumps remain.

  2. Step 2Sift the batter

    Sift the batter through a fine-mesh strainer into a clean bowl to ensure a smooth, lump-free mixture.

  3. Step 3Cook the crepes

    Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan, swirling to coat evenly. Cook until the edges lift and the surface sets, then carefully flip and cook briefly on the other side. Repeat with remaining batter.

    Note

    The crepes should be very thin and soft, not browned.

  4. Step 4Whip the cream

    Whip the cream until stiff peaks form.

  5. Step 5Slice the mango

    Peel and slice the mango into thin slices.

  6. Step 6Assemble the pancakes

    Place a crepe on a flat surface. Add a dollop of whipped cream in the center, top with mango slices. Fold the crepe over the filling, tucking in the sides to form a neat square or envelope shape.

    Note

    Work quickly so the crepes stay soft.
