Method

  1. Step 1Cut the cauliflower

    Cut the cauliflower into florets.

    Pack the cauliflower florets into a clean fermentation jar with turmeric and any aromatics you want to use.

    Note

    Common aromatics include garlic, ginger, peppercorns, or bay leaves.

  3. Step 3Add brine and weight

    Cover completely with your salt brine. Add a fermentation weight to keep everything submerged.

    Note

    The brine should be about 2-3% salt by weight (typically 20-30 g salt per liter of water).

    Ferment until the cauliflower is sour, crunchy, and where you want it.

    Note

    Fermentation typically takes 3-7 days at room temperature. Taste daily after day 3 to check progress.
