Fermented Peach Hot Sauce

Method

  1. Step 1Wash and chop produce

    Take peaches, habaneros, and yellow hot peppers. Give everything a good wash, then rough chop them.

  2. Step 2Blend the mixture

    Give the chopped peaches, peppers, and habaneros a rough blend.

    Note

    You can ferment everything without blending, but blending first helps prevent separation during fermentation.

  3. Step 3Pack into jar

    Pack everything into a jar with a handful of garlic. Give it a rough blend right in the jar.

  4. Step 4Weigh and season

    Weigh the jar against an empty jar to get the weight of the contents. Add 3% salt and 1% sugar based on the weight of everything inside. Add mustard powder over the top.

    Note

    For example, if your contents weigh 500g, add 15g salt (3%) and 5g sugar (1%).

  5. Step 5Ferment and mix daily336h

    For the first couple of weeks, the liquid will separate from the pulp. Every day or so, mix it all back together. Continue until it stops separating.

    Note

    When the mixture stops separating, it's ready for the next step.

  6. Step 6Blend smooth and bottle

    Blend the whole fermented mixture until smooth. Bottle it, seal it, and label it.

    Note

    It's so good you can drink it straight from the bottle!
