Method
- Step 1Sear the beef
Season meat with salt and pepper, and sear it in a hot pot until browned on all sides. Remove meat and set aside.

In the same pot, sauté onions, garlic, and cherry tomatoes until soft.

Add tomato paste and cook for 3-4 minutes.

In a separate pan, add guajillo chili, ancho chili, bay leaves, cinnamon sticks, coriander seed, peppercorn, cloves, paprika, cumin, and oregano. Lightly toast until fragrant.

Add toasted spices and chilies back into the pot with beef stock. Return seared beef to the pot. Allow this to simmer for 45 minutes or until beef is tender.

Remove chilies and spices from the pot along with some of the liquid and blend until smooth. Shred the meat as well.
- Step 7Combine pasta and sauce
Add blended sauce and shredded meat back to the pot with parmesan cheese, cooked pasta, pasta water, and butter. Toss until well combined.
NoteReserve some pasta water before draining to help emulsify the sauce.
