Beef Ragu Gnocchi

Tender gnocchi coated in a rich beef ragu with melt-in-your-mouth beef and Parmesan.

Method

  1. Step 1Sear the beef

    Season the beef with salt and black pepper. Sear in oil on all sides until golden brown. Remove and set aside.

  2. Step 2Sauté the vegetables

    In the same pot, sauté finely chopped onion, carrot and celery. Add the tomato paste.

    Note

    The author forgot to add the tomato paste but notes it was still delicious without it.

  3. Step 3Deglaze with wine

    Pour in a little red wine and let it reduce slightly.

    Note

    You can skip this step if you don't drink alcohol.

  4. Step 4Build the ragu

    Return the beef to the pot. Add the crushed tomatoes, beef stock, rosemary and Parmesan rind.

    Cover and simmer on low heat until the beef is very tender.

  6. Step 6Shred the beef

    Remove the beef, shred it with a fork, and return it to the sauce. Adjust the seasoning to taste.

    Add the gnocchi and cook for a few minutes, according to the package instructions. Add a little more stock if needed.
