Method

  1. Step 1Grill the flatbread3 min

    Heat a grill pan or skillet over medium-high heat. Brush both pieces of flatbread lightly with olive oil and grill until charred and warmed through, about 2-3 minutes per side.

    Note

    You can also toast the flatbread in the oven at 200°C (400°F) for 5 minutes if you don't have a grill pan.

  2. Step 2Spread the pesto

    Place the grilled flatbreads on a cutting board. Spread pesto evenly over the inside of both pieces.

  3. Step 3Add arugula and burrata

    Layer arugula on one piece of flatbread. Tear the burrata into pieces and distribute evenly over the arugula.

    Note

    Burrata is delicate—handle gently to keep the creamy center intact.

  4. Step 4Top with tomatoes

    Arrange cherry tomatoes over the burrata layer. Drizzle with balsamic glaze and sprinkle with red pepper flakes, salt, and black pepper.

    Note

    You can halve the cherry tomatoes for easier eating if you prefer.

  5. Step 5Close and serve

    Place the second piece of flatbread on top to close the sandwich. Cut in half and serve immediately.

    Note

    Serve with extra balsamic glaze on the side for dipping.
