Method

  1. Step 1Light the charcoal15 min

    Place two firelighters at the base of the chimney starter and pour charcoal into the starter. Light the firelighters and let them burn until the charcoal turns orange with white ash coating.

    Note

    The chimney design encourages rapid airflow and gets the charcoal ready in about 15 minutes.

  2. Step 2Pour the charcoal

    Once the charcoal is ready, carefully pour it into the chimney or directly onto the grill grate, depending on your setup.

  3. Step 3Sear the steak3 min

    Place the steak directly over the hot charcoal. Grill fast, flipping once, until a deep crust forms on both sides and the interior is cooked to your preferred doneness.

    Note

    The extremely high heat from the chimney starter creates an edge-to-edge sear. Rest the steak for a few minutes before slicing.

  4. Step 4Grill the bacon skewers2 min

    Thread bacon onto skewers and place over the charcoal. Grill until crispy and charred, turning occasionally.

    Note

    Bacon fat will drip and flare up—embrace it for extra flavor.

    Brush salmon with soy sauce and olive oil. Place skin-side down on the grill grate over the chimney. Grill for about 1 minute, then finish with a squeeze of citrus if desired.

    Note

    High heat cooks salmon incredibly fast—watch closely to avoid overcooking.

    Remove all grilled items from the heat and serve immediately while hot.
