Method

  1. Step 1Combine pickle liquid ingredients

    In a large bowl or container, combine rice wine vinegar, ice, sumac, red chili flakes, coriander, peppercorn, bay leaf, salt to taste, and brown sugar. Stir until sugar and salt are dissolved.

    Cut melon into bite-sized pieces or wedges. Add melon to the pickle liquid, ensuring pieces are fully submerged. Let sit for at least 30 minutes, or refrigerate for up to several days for deeper flavor.

    Note

    The melon will absorb the tangy, spiced brine quickly. Great as a snack, salad topping, or paired with grilled seafood like scallops.
