Cut the beef into long, thin strips. Heat the vegetable oil in a large frying pan over medium-high heat. Season the beef with salt and black pepper, then fry it on both sides until golden brown. Remove the beef from the pan and set aside.

In the same pan, add the sliced onion and mushrooms. Season with salt and pepper and sauté until the onion becomes soft and the mushrooms start to release their juices. Add the minced garlic and cook for another minute.

Sprinkle the flour over the mushrooms and onions and mix everything well. Gradually pour in the beef broth, stirring continuously to prevent lumps. Add the sour cream or yogurt and a little mustard. Mix well and let the sauce simmer gently for a few minutes until it becomes creamy.
