custardMilkGelatin - Step 5Cool over ice
Pour the mixture over a bowl of ice water and stir occasionally to cool it down quickly.
NoteThis helps the mixture thicken to the right consistency before setting.
- Step 6Pour into molds
Once cooled and slightly thickened, pour the panna custard into serving containers.
- Step 7Chill until set4h
Refrigerate the panna custard for at least 4 hours or until fully set.
NoteOvernight chilling gives the best texture.
- Step 8Prepare the rhubarb
Cut rhubarb into batons and poach in simmering water until tender but still holding its shape.
NoteDon't overcook the rhubarb or it will turn to mush. It should be tender but retain some structure.
Rhubarb - Step 9Serve
