Method

  1. Step 1Prepare the espresso

    Prepare an espresso with a traditional moka pot and pour it into a glass.

  2. Step 2Separate the egg yolks

    Separate the egg yolks and place them in a bowl.

    Use very fresh eggs for best results

  3. Step 3Prepare the zabaglione

    Whisk the egg yolks with sugar in a bowl over a double boiler, beating vigorously until you get a light and fluffy cream.

    Keep whisking until the mixture becomes voluminous and forms a ribbon

  4. Step 4Add the mascarpone

    Fold the mascarpone into the zabaglione, stirring gently until you get a smooth and uniform cream.

  5. Step 5Prepare the moka pot

    Fill the moka pot with ground coffee and place it on the heat.

  6. Step 6Assemble the coffee

    Pour the mascarpone and zabaglione cream into the glass with the cooled espresso.

    Serve the coffee immediately with the whipped cream on top.

    Note

    You can dust with a little cocoa or ground coffee for decoration
