Method

  1. Step 1Grill the onions

    Char the spring onions and red onion on a grill until blackened and softened.

    Remove the charred onions from the grill and chop them finely.

  3. Step 3Slice the tarragon

    Thinly slice the fresh tarragon.

  4. Step 4Mix the butter

    In a bowl, combine the softened butter with the chopped charred onions and sliced tarragon. Mix until well blended.

    Note

    Let the butter come to room temperature before mixing for easier blending.

  5. Step 5Shape and chill

    Transfer the compound butter mixture to a sheet of parchment paper or plastic wrap. Shape into a log, wrap tightly, and refrigerate until firm.

    Store in the freezer for longer shelf life; slice off portions as needed.
