Burrata Caprese Pizza Sandwich

Method

  1. Step 1Make the pesto

    In a mortar, crush garlic cloves. Add fresh basil, olive oil, and grated parmesan cheese. Pound until you have a smooth pesto consistency.

  2. Step 2Sear the tomatoes

    Heat olive oil in a pan over medium-high heat. Add whole cherry tomatoes and a crushed garlic clove. Sear until the tomatoes are blistered and slightly caramelized.

    Note

    The tomatoes should be golden and softened but still holding their shape.

  3. Step 3Cook the dough

    Place the pizza dough in a pizza oven or very hot oven until it puffs and develops char marks on both sides.

    Note

    A pizza oven runs around 800°F; in a conventional oven, use the highest setting with a pizza stone.

  4. Step 4Assemble the sandwich

    Spread the pesto on the cooked dough. Layer arugula on top, then tear the burrata over it. Add the seared tomatoes. Season with black pepper and red chili flakes, then drizzle with balsamic glaze.

  5. Step 5Fold and serve

    Fold the dough over to form a sandwich. Cut in half if desired and serve immediately.

    Enjoy while the dough is still crispy and the burrata is creamy.
