   Passaggio 1. Dry the strawberries

   Wipe the strawberries with a damp paper towel and dry them completely, without submerging them in water.

   Do not submerge the strawberries in water, as it makes dipping and decorating harder.

   Take the stems off the strawberries and set them aside.

   In a microwave-safe bowl, microwave the chocolate for 30 seconds, stirring between each interval, until smooth and melted all the way through. If it does not flow off the spoon, stir in a small amount of coconut oil to thin it.

   Insert toothpicks into the tops of the strawberries.

   Holding the toothpick, dip each strawberry in the melted chocolate and shake off any excess.

   Passaggio 6. Coat with sanding sugar

   While the chocolate is still wet, cover each strawberry with white sanding sugar and place it on a baking pan lined with parchment paper. Repeat with all strawberries and let the chocolate set completely.

   Place the rolos upside down on the baking pan and add a little extra chocolate on top. Flip each strawberry and gently place it on a rolo so the rolo sticks, balancing it upright. Let it set completely for a few minutes.

   On a cutting board or large plate, pipe extra melted chocolate in a loopy design to resemble wire.

   Lay the strawberries down with the rolo side touching the chocolate wire.
