- Étape 1Slice the cucumbers
Wash your cucumbers then slice off the ends. Thinly slice using a knife or mandolin.
NoteThe author notes that traditionally the cucumber would be smashed lengthways then cut into rough chunks, but thin slices offer a different mouthfeel—experiment to see what you prefer.
Cucumber - Étape 2Salt and drain5 min
Place the sliced cucumbers into a bowl and sprinkle some salt over to draw out any excess moisture. Mix well and set aside for 5 minutes. Rinse the cucumber slices well at least 3 times then drain well. Pat dry with a paper towel if needed.

Add in the black vinegar, soy sauce, sesame oil, sugar, minced garlic, and chili oil. Toss well to coat.
