   Paso 1Assemble the sandwich

   Add mustard to one slice of sourdough bread. Pile Fontina and Gruyere cheese on top, then close your sandwich with the second slice of bread.

   Paso 2Toast in the pan

   Put a thin layer of mayo on one side of your sandwich and place it mayo-side down into a cold cast iron or non-stick pan. Turn the heat to medium low and add mayo to the other side. Toast both sides until golden and cheese has melted. You can add the lid of the pan if you need help melting the cheese.

   Nota

   Starting in a cold pan helps the cheese melt before the bread burns.
