   Scoop the coffee cookie dough onto a lined baking sheet with a cookie scoop.

   Roll each scooped portion of dough between your palms into a smooth ball.

   Pipe the mascarpone cream in a swirl onto each cooled coffee cookie.

   Sift cocoa powder over the mascarpone cream through a fine sieve.
