    Season chicken with olive oil and all chicken seasonings. Air fry at 400°F for 15 minutes, flipping halfway. Let cool, then chop very finely.

    Mix chopped chicken with all filling ingredients until well combined.

    Slice onion into ½-inch rings and separate the layers. Place a smaller ring inside a larger ring.

    Pack the chicken mixture tightly between the onion rings, leaving the center empty.

    Freeze stuffed onion rings for at least 30 minutes to help keep the filling together.

    Note

    Freezing the stuffed onion rings before breading is KEY to keeping everything together while frying!

  6. Step 6Bread the rings

    Coat each frozen onion ring in seasoned flour, shaking off excess. Dip into beaten eggs, then coat completely in Panko.
