Method

  1. Step 1Mix the ingredients

    Mix 400 g cottage cheese (no more than 9% fat), 4 eggs, 200 g flour, and 120 g grated cheese until smooth. Don't add vanilla extract so the waffles work with both sweet and savory fillings.

    Note

    Use cottage cheese with no more than 9% fat — higher fat content will add extra moisture and the waffles will stick to the waffle iron.

  2. Step 2Bake the waffles3m 30s

    Heat the waffle iron. Pour in a portion of batter and bake for 3–3.5 minutes. Don't open the waffle iron early — the waffles need to set and brown.

    Note

    If you open the waffle iron too early, the batter will stick and won't cook through.

  3. Step 3Cool and freeze

    Let the cooked waffles cool completely, then freeze. Store in a vacuum-sealed bag or wrapped tightly in plastic. The waffles will keep for up to 3 months.

    Note

    To serve, take a waffle from the freezer, thaw it, and add a filling: Greek yogurt with honey and berries, cream cheese with herbs and egg, Nutella with banana, or avocado.
