Method

  1. Step 1Pulse the onion

    Pulse the yellow onion until it's finely minced. Don't puree it, otherwise the onion liquid will make the kabobs loose and watery.

  2. Step 2Squeeze out liquid

    Using a cheesecloth, squeeze out as much liquid as possible from the onions. This part is important—it's what's gonna give the kebabs good flavor and removing the liquid is gonna help keep it together.

  3. Step 3Mix beef mixture

    Combine the ground beef, squeezed onion, salt, black pepper, turmeric, cayenne pepper, and saffron water.

  4. Step 4Press into dish

    Press the beef mixture as firmly as you can into the baking dish.

  5. Step 5Score into kebabs

    Using a knife, score the beef into long kebab-shaped stripes. Then use a spatula to create indentations to give it that classic kebab appearance.

  6. Step 6Bake the kabobs

    Pop the baking dish in the oven and bake until cooked through.
