Stuffed Cabbage

Method

  1. Step 1Boil the cabbage10 min

    Boil the green cabbage until the leaves are tender and pliable. Carefully separate the leaves and set aside.

  2. Step 2Prepare the stuffing

    In a large bowl, combine 2 lbs ground beef, 2 eggs, 1/2 cup matzo meal, the finely chopped onion, 3 cloves finely chopped garlic, and 3 tbsp chopped parsley. Season with salt and pepper to taste. Mix until well combined.

    Don't overmix the meat mixture or it will become tough

  3. Step 3Make the sauce

    In a separate bowl, combine the 28 oz can of crushed tomatoes, 15 oz can of tomato sauce, 1/4 cup brown sugar, and 2 tbsp vinegar. Season with salt and pepper to taste. Stir well.

  4. Step 4Stuff the cabbage leaves

    Place a portion of the beef stuffing onto each cabbage leaf. Roll up the leaf, tucking in the sides, to create a neat packet.

    Use about 1/4 to 1/3 cup of filling per leaf depending on leaf size

    Spread a thin layer of sauce on the bottom of a large pot or Dutch oven. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining sauce over the rolls. Cover and simmer over low heat for 1.5 hours until the beef is fully cooked and the flavors have melded.

    Note

    Check occasionally and add a little water if the sauce is getting too thick

    Carefully transfer the stuffed cabbage rolls to serving plates. Spoon additional sauce over the top and enjoy!
