Method

  1. Step 1Make the herb crust

    Blitz bread, herbs, Parmesan and melted butter into a green crust.

  2. Step 2Sear and rest lamb15 min

    Sear the lamb racks hard in neutral oil to develop colour, then rest 15 minutes before crusting.

    Note

    The resting step after searing is the key to even pink throughout — don't skip it.

  3. Step 3Crust and roast lamb

    Brush lamb with Dijon mustard, press on the herb crust, and roast at 100°C until internal temperature reaches 50°C.

    Note

    Low and slow roasting keeps the meat pink edge to edge with no grey ring.

  4. Step 4Build the red wine jus

    Sweat shallots, deglaze with red wine, add veal fond and thyme, reduce, strain, and finish with balsamic vinegar.

  5. Step 5Rest the lamb10 min

    Rest the roasted lamb for 10 minutes to allow internal temperature to rise to 54°C.

  6. Step 6Cook the minted peas

    Warm frozen peas with shallot, butter, and mint.

  7. Step 7Finish the jus

    Off heat, whisk ice-cold butter cubes into the jus for a mirror-gloss shine (monter au beurre).

    Note

    The cold butter must be added off heat and whisked in gently to emulsify properly.

    Carve the lamb between the bones, plate with minted peas, and pour the red wine jus.
